I noticed that the pocket version seams to be darker than the sudio version Why? Also does the pocket version have to be full frame to do a manual W/B?

Pocket and studio versions are the same "shades".

For in camera White balance it depends on the camera. Nikon's need to have their frame filled, Canons only need the small circle to be filled (much better!), others vary from camera to camera.

Since I have a Nikon D100 I'd be better off with the studio version then.

If you plan to use Preset WB then yes, the Studio is the right choice. Personally because we shoot RAW I find Preset (Custom) WB to be a waste of time, but that is just for my workflow. It justs adds to my capture workflow, where I only want to be thinking of subject and content and composition, not whether or not the Preset is set correctly. Just take WhiBal shots when appropriate and no need to worry about Preset which is a much lomger process that a post production WhiBal shot. Just my opinion. YMMV
